You know when you're rolling out a pie crust how the counter gets sticky and you vow you will never ever make pie crust from scratch again because it's such a hassle? The trick is in only partly in the recipe. The real mojo lies in rolling at the proper temperature and dusting the counter with flour. But it's icky to take your gooey hands and reach into the flour sack for a handful, which is always too much anyway.
